- 4 medium potatoes, peeled and thinly sliced
- 1 onion, thinly sliced
- 6 large eggs
- Salt and pepper, to taste
- Olive oil
Instructions
- Heat a generous amount of olive oil in a large non-stick skillet over medium heat. Add the sliced potatoes and onions to the skillet, spreading them out evenly. Cook, stirring occasionally, until the potatoes are tender and lightly golden, about 10-15 minutes. Be careful not to let them brown too much.
- While the potatoes and onions are cooking, crack the eggs into a large mixing bowl. Season with salt and pepper, then whisk until well combined.
- Once the potatoes and onions are cooked, use a slotted spoon to transfer them to the bowl with the beaten eggs. Gently fold the potatoes and onions into the eggs until they are evenly coated.
- Return the skillet to the heat and add a bit more olive oil if needed. Pour the egg mixture into the skillet, spreading it out evenly with a spatula.
- Cook the omelette over medium-low heat, shaking the pan occasionally to prevent sticking. Once the edges are set and the bottom is golden brown, it’s time to flip the omelette.
- Place a large plate upside down over the skillet. Carefully flip the skillet over so that the omelette falls onto the plate. Then, slide the omelette back into the skillet to cook the other side.
- Continue cooking until the omelette is set and golden brown on both sides, about 5-7 minutes more.
- Once cooked through, transfer the omelette to a serving platter and allow it to cool slightly before slicing into wedges.
How to serve the Spanish Omelette
